Winemaking method | After the harvest, the grapes are separated into two portions. The first one follows a drying process to intensify the fruity notes and the natural concentration of sugar in each grape. The second portion starts the alcoholic fermentation. |
Maturation | The second portion of grapes ages in oak barrels where malolactic fermentation occurs. During this process, the first portion of grapes (after the drying process) is blended with the second. A second fermentation takes place until springtime. The wine is then ready to be bottled. |
