Winemaking method | The grape is treated to a four-hour maceration before being pressed, then kept at low temperatures for static decanting. To complete malolactic fermentation, it does spontaneous fermentation with native yeasts at 22°C. |
Maturation | Aged for six months in 20-hectolitre oak barrels and then for an additional two months in stainless steel tanks. Bottled using a non-sterile filtration method in the summer. |
