Winemaking method | The grape is treated to a four-hour maceration before being pressed, then kept at low temperatures for static decanting. To complete malolactic fermentation, it does spontaneous fermentation with native yeasts at 22°C. |
Maturation | It ages in stainless steel tanks using its own yeasts for six months. Bottled in April using non-sterile filtration. |
